For a tasty lunch or appetizer try our Bruschetta recipe:
- 2 English Muffins sliced in thirds
- 2 Tbsp. olive oil
- 1 ½ Tbsp. Balsamic vinegar
- 2 or 3 ripe medium tomatoes, chopped and drained in a strainer for 20 minutes.
- 2 cloves garlic, crushed
- Pinch of Black Pepper
- 1 Tbsp. fresh basil
Combine oil, vinegar, basil, garlic and whisk. Add drained tomatoes to the dressing and toss to coat. Marinate for 15 minutes. Grill or toast the English Muffin on both sides. When toasted, top each slice with tomato mixture. If desired, add Parmesan cheese. |
